veggie lasagna
(with a meat sauce)


Instructions: 
veggies included: onions, garlic, red & green peppers, carrots, zucchini, mushrooms, broccoli, and spinach... 
(I did not sautee the spinach, but layered it separately during 'assembly').  
Sautee veggies in olive oil in that order.  (I cooked 1 lb. of ground sirloin first, set aside, then sauteed all veggies... then I added the meat back in with the veggies and a jar and a half of good quality sauce.) 
 Mix together a large container of ricotta, three eggs, shredded parm and mozz, salt, pepper, italian spices, parsley.
Assemble: Small layer of sauce on bottom of 9 x 13.  Then add lasagna noodles (I used no-boil).  Layer on ricotta mixture, then a layer of spinach, next add scoops of the veggie sauce mixture, spread, then the lasagna, then ricotta, spinach, then veggie sauce,  and finally add some shredded mozz cheese.  
Cook 40 mins at 350.
