Roast Chicken with winter vegetables
Stuff the chicken with lemon, garlic, thyme. Basted with melted butter. For the side I used carrots, parsnips, butternut squash, onions and baby yukon gold potatoes. I tossed them in olive oil, salt and pepper and roasted the whole thing for about 1 hour and 15 minutes (5 lb. chicken). Delicious and soo easy!
