Shrimp with Tomatoes and Spinach
Shrimp, Tomatoes, & Spinach
2 Tb olive oil
1 1/2 lb. large/jumbo shrimp, peeled and deveined
3 cloves garlic, minced
1/8 ts. crushed red pepper flakes
3/4 cup dry white wine
1 1/2 cups grape toms, halved
1/4 cup finely chopped basil (if you have it)
2 cups coarsely chopped spinach (I used 3-4 cups)
salt & pepper
3 cups cooked wild rice
(Prepare wild rice as instructed on package...)
1. Warm oil in large skillet over med heat... add shrimp and cook until just cooked through, about 2 minutes. Using slotted spoon, remove shrimp to another bowl, leaving oil in skillet.
2. Add garlic and red pepper flakes to skillet. Cook until fragrant, about 30 secs. Add wine, cook over high heat, about 2 mins. Add basil, spinach and tomatoes... salt and pepper.
3. Return shrimp to pan. Cook over med heat until heated through. Serve over already prepared and warmed wild rice.
