Carrot Orange Soup with ginger



Gingered Carrot Orange Soup







1 lb. carrots, chopped
2 onions, sliced
1" piece ginger
2 tbs butter/olive oil
4 cups veg broth
3 oranges, peeled and halved
1/4" piece of orange peel
salt & pepper


Saute carrots, onions, ginger in butter/oil until soft.
Add 2 cups broth, simmer until tender.
Place oranges, peel, and cooked veg mixture into blender (Vitamix for best results).
Secure lid...turn machine on... increase to high for 30-45 seconds.
Season with salt and pepper.
