Snowy Day Cupcakes...













Katie and Ethan whipping up a batch of coconut cupcakes on a snowy afternoon. (The coconut was their idea- very creative and yummy!)
The recipe adapted from the Hummingbird Bakery Cookbook:

Vanilla Cupcakes:
*1 c flour
*3/4 c sugar
*1 1/2 t baking powder
*pinch salt
*3 T butter
*1/2 c whole milk
*1 egg
*1/4 t vanilla

Oven to 325...In electic mixer: flour, sugar, baking powder, salt and butter. Beat on slow till combined. Gradually add half the milk. Whisk the egg, vanilla, and remaining milk in a separate bowl. Pour into mixture and beat until incorporated. Scrape bowl. Beat until smooth. Spoon into paper cups. Bake 20 mins approx. Do not overbake! Decorate with frosting.

Coconut Frosting:
*2 c confectioners' sugar, sifted
*5 T butter, room temp
*2 T milk
*a few drops of vanilla
*1/4 c coconut

Beat sugar and butter till mixed. Combine milk and vanilla in a separate bowl, then add to mixture. Add coconut. Once incorporated, mix on high 5 minutes or until fluffy.
*Decorate, eat and enjoy!
