Kale Chips... (yes, kale!)

Take some super nutritious kale, wash, dry, remove stems and tear into bite-sized pieces. I have read you can spread out onto a cookie sheet lined with parchment but we thought they stayed a little too moist and this time we baked them on a wire rack on top of a cookie sheet.

Sprinkle kale pieces with olive oil and sea salt. Bake at 350 for 7-9 minutes or until crispy. SOOOO delicious you will never miss potato chips again. I served it with baked haddock and basmati rice.

They are so light and crispy and salty-and addictive! I could have practically eaten the whole batch.
